Classic Trucks did an article on this last year. Review the Technical articles to find it.
Basically, Z cut the frame, shorten the parking brake cable, drive shaft, brake lines, gas lines, and wiring harness. Dis-assemble the bed (its all bolted together), cut down the bed floor, order new fenders ($550 a piece) re-use bed front and tailgate.
They cut their fenders down. I think it is easier to get used ones or new ones than to cut down long ones. Besides you can resell the long ones.

If you go to the top and click on TECHNICAL go to page 9 Project Old School. I beleve there is a GMC. It tells just what to do how to cut the frame and all.
