I'm going to start a frame-off restoration project - is it better for me to find a manual or automatic for the above truck?

Personally, I prefer the basic simplicity of a manual transmission. I had a 4-speed in my 70 4x4.  Manual trannys steal less power from the engine, but automatics are generally more comfortable to drive.

I'd say it depends on how much you plan to drive it.  If it's a resto/show truck, then I'd go with whatever is original.  If it's a driver, then you should definitely consider a later model overdrive, manual or auto.  A New Venture 4500 or 5600 gives you the low gear for power, plus overdrive, for cruising/economy.  A 700r4 gives you similar operating range, but with one less pedal, and a hole in the floorboard.  A nice big cooler should squelch any chance of overheating.

Just some things to consider.
